Ingredients:
Polynesian Style Pineapple Bacon Skewers
1 pineapple
1 lb bacon
1 boneless/skinless chicken breast, cubed
1 pkg. cherry tomatoes* (*with apologies to my goon sweetheart; he hates the things)
1 cup white rice, any variety
1 1/2-2 cups water
Juice of 1/2 of a lime
Dried parsley
Glaze:
1/4 c. soy sauce
2 T. honey
squeeze of lime juice
cracked black pepper
crushed red pepper flakes
1/2 t. ground ginger
Step 1:
The night before cooking everything, I prepped by frying up 1.5 pounds of bacon. You can set the bacon in the fridge, or make BLTs, whatever. As you'll see later, I used it as garnish.
