1 15 oz. can of black beans (drain all liquid)
1 bigger potato or 2 smaller potatoes (microwave till soft and remove skin, mash up to smaller chunks)
1/3 to 1/2 cup flax seed meal (found in the flour section, basically ground up flax seed, used to make it stick better and healthy too)
1 teaspoon minced garlic
1 tablespoon lime juice
1 teaspoon salt
½ teaspoon cummin
Optional: mince some sliced jalapenos for more flavor
Optional: add a splash of tabasco for more flavor
Preparation:
Put everything in a bowl, mix it up and then mash everything several times with a potato masher. Just kind of squish up some of the black beans and mix with the potatoes to make it stick better.
Form 4 burger sized patties. Use your hands, don't be shy. Pat them so the stick together good.
Fry in a medium heat pan on each side for 2-3 minutes in a a tablespoon of olive oil.
Serve on a bun with lettuce and a little ranch dressing or the condiments of your choice.
Very tasty, healthy, easy and quite inexpensive.
