2 boneless chicken breasts cooked and chopped up
2 red peppers, cored
2 Tbsp or to desired hotness of franks red hot sauce
2 Tbsp of lemon juice
3/4 cup yellow onion chopped
2 cloves of garlic sliced
1 clove of garlic minced
1 can (160 ml) of plain tomato paste
1/2 of the tomato paste can filled with water
3/4 cup ranch salad dressing
4 crushed plain soda crackers
parmesan cheese
mozzarella cheese
various spices to taste salt, pepper, basil
Preparation:
Pre cook the chicken while preparing other ingredients to cut down baking time.
While chicken is cooking chop onions, and place in a bowl with the sliced garlic, tomato paste, water, ranch dressing, franks red hot sauce, lemon juice, and salt, pepper and basil to taste. Mix well.
Core peppers, and crush soda crackers to fine grit and shred mozzarella cheese.
Once chicken is cooked and no pink is noticed chop and add to sauce mixing well. In a small baking dish fill peppers one spoonfull at a time. After each fill sprinkle on parmesan and add a layer of mozzarella, continue until peppers are full. On the last layer sprinkle parmesan, add mozzarella, then sprinkle on cracker crumbs, and minced garlic along with a touch of basil and parmesan. Bake for 30 min at 400 degrees F. Enjoy!
