Ingredients:
6 chicken cutlets
1/4 cup lime juice
1/4 cup white wine
1 large chopped tomatoe
1/8 cup of capers
salt and pepper to taste
1 tsp; dijon mustard
1/8 cup of bacon bits
1/4 cup of fresh parsley
seasoned bread crumbs
2 eggs
Preparation:
drip chicken in egg then in bread crumbs place in med to hot skillet of olive oil. when almost done remove to warm plate cover with foil reduce heat to med adding the rest of ingredients to skillet. cook for few minutes then place chicken back in skillet reduce heat to simmer and cover. cook for another 5 minutes.serve.
